SUMMER GRILLED CHICKEN AND STRAWBERRY SALAD
Fresh, flavorful, and packed with protein, this salad is the perfect light meal for warm summer days!
Ingredients
- 2 boneless, skinless chicken breasts
- 5 oz mixed spring greens
- 1 cup fresh strawberries, sliced
- ½ cup blueberries
- ¼ cup crumbled feta cheese
- ¼ cup chopped pecans (optional)
- 2 tablespoons balsamic vinaigrette
Directions
- Season the chicken with your favorite herbs, garlic powder, salt, and pepper.
- Grill over medium heat for 5–7 minutes per side, or until fully cooked. Let rest for a few minutes before slicing.
- Divide the mixed greens among four plates.
- Top with sliced chicken, strawberries, blueberries, feta, and pecans.
- Drizzle lightly with balsamic vinaigrette just before serving.
