SUMMER GRILLED CHICKEN AND STRAWBERRY SALAD

Fresh, flavorful, and packed with protein, this salad is the perfect light meal for warm summer days!

Ingredients

  • 2 boneless, skinless chicken breasts
  • 5 oz mixed spring greens
  • 1 cup fresh strawberries, sliced
  • ½ cup blueberries
  • ¼ cup crumbled feta cheese
  • ¼ cup chopped pecans (optional)
  • 2 tablespoons balsamic vinaigrette

Directions

  1. Season the chicken with your favorite herbs, garlic powder, salt, and pepper.
  2. Grill over medium heat for 5–7 minutes per side, or until fully cooked. Let rest for a few minutes before slicing.
  3. Divide the mixed greens among four plates.
  4. Top with sliced chicken, strawberries, blueberries, feta, and pecans.
  5. Drizzle lightly with balsamic vinaigrette just before serving.
