Grilled Chicken Skewers with Yogurt Herb Dip

Grilled Chicken Skewers with Yogurt Herb Dip: High-protein, low-carb, and perfect for the grill!

Ingredients:
For the Skewers
-1 lb boneless, skinless chicken breast, cut into 1-inch pieces
-1 red bell pepper, chopped into chunks
-1 zucchini, sliced into half-moons
-1 red onion, chopped into large pieces
-1 tbsp olive oil
-Juice of 1 lemon
-2 garlic cloves, minced
-1 tsp dried oregano
-Salt & pepper to taste
-Bamboo or metal skewers (if using bamboo, soak in water 20 min first)

For the Yogurt Herb Dip:
-1/2 cup plain Greek yogurt
-1 tbsp fresh dill, chopped (or 1 tsp dried)
-1 tbsp fresh parsley, chopped
-1 tsp lemon juice
-1/2 garlic clove, finely grated or minced
-Salt & pepper to taste

Directions:
Marinate the Chicken
In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken pieces and toss to coat. Marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).

Assemble the Skewers
Thread the marinated chicken, bell pepper, zucchini, and onion onto skewers, alternating ingredients for color and balance.

Grill
Heat your grill or grill pan over medium-high heat. Grill the skewers for about 10–12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.

Make the Yogurt Herb Dip
In a small bowl, mix together all dip ingredients. Chill until ready to serve.

Serve
Serve your skewers warm with the yogurt herb dip on the side. Optional: sprinkle a little extra fresh dill or parsley over the top for a fresh finish.
