Veggie Egg Muffins

These mini egg muffins are perfect for meal prep and packed with protein and nutrients to start your day right.

Ingredients:

  • 4 large eggs
  • 1/4 cup low-fat milk or unsweetened almond milk
  • 1/4 cup shredded reduced-fat cheese (like cheddar or mozzarella)
  • 1/4 cup finely chopped spinach
  • 1/4 cup diced bell peppers
  • 1/4 cup diced cooked turkey or chicken sausage (optional)
  • Salt & pepper to taste
  • Nonstick cooking spray or silicone muffin liners

Instructions:

  • Preheat oven to 350°F (175°C).
  • Spray a muffin tin with nonstick spray or use silicone liners.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  • Stir in chopped veggies, cooked sausage (if using), and shredded cheese.
  • Pour the mixture evenly into 6 muffin cups.
  • Bake for 18–20 minutes, or until the centers are set and slightly golden.
  • Let cool for a few minutes before removing from the tin.
