Ingredients:
- 4 large eggs
- 1/4 cup low-fat milk or unsweetened almond milk
- 1/4 cup shredded reduced-fat cheese (like cheddar or mozzarella)
- 1/4 cup finely chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup diced cooked turkey or chicken sausage (optional)
- Salt & pepper to taste
- Nonstick cooking spray or silicone muffin liners

Instructions:
- Preheat oven to 350°F (175°C).
- Spray a muffin tin with nonstick spray or use silicone liners.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in chopped veggies, cooked sausage (if using), and shredded cheese.
- Pour the mixture evenly into 6 muffin cups.
- Bake for 18–20 minutes, or until the centers are set and slightly golden.
- Let cool for a few minutes before removing from the tin.
