Ingredients

1 tablespoon olive oil

1/2 pound boneless, skinless chicken breast, thinly sliced

1 cup fresh asparagus, cut into 2-inch pieces

1/2 red bell pepper, thinly sliced

1/4 cup chopped scallions

1 clove garlic, minced

1 teaspoon grated fresh ginger (optional)

1 tablespoon low-sodium soy sauce or coconut aminos

1 teaspoon sesame oil (optional for flavor)

Salt and pepper, to taste

Sesame seeds (optional garnish)
Instructions

Heat the oil in a non-stick skillet over medium-high heat.

Add chicken, season with salt and pepper, and cook until fully cooked (about 4–5 minutes). Remove from skillet and set aside.

In the same pan, stir-fry asparagus, bell pepper, and scallions for 2–3 minutes until just tender.

Add garlic and ginger, stir-frying for another 30 seconds until fragrant.

Return chicken to the pan, add soy sauce and sesame oil, and toss to coat evenly. Cook for 1 more minute.

Serve hot, topped with sesame seeds if desired.
